Tofu Bolognese Spaghetti

If there’s one thing I love, it’s a big, cozy bowl of pasta. But let’s be real—traditional Bolognese can be heavy. That’s why I created this Tofu Bolognese Spaghetti—a high-protein, veggie-packed, and completely plant-based take on the classic. It’s light, flavorful, and perfect for meal prep. Plus, it keeps beautifully in the fridge or freezer, making it a lifesaver for busy weeks!

Whether you’re vegan, trying to eat healthier, or just looking for a delicious new way to enjoy spaghetti night, this dish is a must-try. The tofu gives it a hearty texture, the fresh veggies add a burst of nutrients, and the tomato sauce brings everything together in the most comforting way. Let’s get cooking!

Tofu Bolognese Spaghetti

 

Servings: 4-6

Cook Time: 15 mins
Storage: Up to 5 days in the fridge, 30 days in the freezer

 

Ingredients:

  • 500g tofu (pressed)
  • 1 tablespoon olive oil
  • 1 cup carrot (chopped)
  • 1 cup celery (chopped)
  • 1 cup onion (chopped)
  • 1 cup mushrooms (chopped)
  • 2 cups tomato sauce
  • 2 cups water
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • Fresh basil (for aromatic flavor)
  • Spaghetti noodles

 

Instructions:

1. Press the tofu– Use a tofu press or a clean kitchen towel to remove excess water. This step is KEY for getting that meaty texture.

 

 

2. Chop it up – Dice your carrot, celery, onion, and mushrooms like a pro. These veggies add a deep, rich flavor to your sauce.

 

 

 

3. Sizzle time – Heat olive oil in a pot, then crumble in the tofu. Cook for about 5 minutes to dry out the moisture and give it a slightly crispy texture.

4. Veggies in! – Toss in the chopped veggies and cook until they soften and smell amazing.

 

 

 

5. Tomato magic – Pour in the tomato sauce and water. Stir everything together and season with salt and pepper.

 

 

 

6. Basil boost – Add fresh basil to give your Bolognese that extra Italian touch.

 

 

 

7. Simmer & store – Let it simmer for 10 minutes. Once cooled, store it in a jar—good for meal prep!

 

 

 

8. Noodles time – Cook spaghetti using a pasta maker or microwave it with water for an easy fix.

 

 

 

9. Assemble & enjoy – Serve your rich tofu Bolognese over spaghetti, top with extra basil, and dig in!

 

 

 

Tip: This sauce gets even BETTER the next day as the flavors deepen. Pair it with a whole wheat or veggie-based pasta for an even healthier twist!
